Bajaderki, troche inaczej/ Cakes made of nothing







Ten przepis powstal zupelnie w nieplanowany sposob.
Kiedy przygotowywalam ostatnim razem bread and butter pudding, dotarlo do mnie ze jeszcze nigdy nie robilam bread pudding. A ten ostatni jest doslownie puddingiem, ktory trzeba upiec z dosyc oczywistych skladnikow: chleb, jajka, maslo, alkohol, skorka kandyzowana, bakalie.
Ja zastapilam chleb ciastem, ciastkami i muffinami, i polaczylam je z jajkami, alkoholem. Jak jest napisane wyzej w przepisie, nie bylo potrzeby dodawac bakali jako ze te pojawily sie w pokruszonych juz ciastkach. Deser naprawde bardzo niewymagajacy: kruszymy, dodajemy pozostale skladniki, mieszamy, wylewamy do formy i pieczemy przez niecale pol godziny.


Bajaderka, Polish bread/cake pudding

Traditional bajaderka is prepared as a no baking pudding as there are no eggs in the recipe. I decided to make this one using eggs so I had to bake it but only for about 30 minutes


650 g crumbed cake/cookies/ muffins ( I used chocolate cake, orange muffins, very sweet oat and dried apricot cookies)
220 g jam ( it can be apricot jam or marmalade or quince jelly, any jam or preserve which is will give some tartiness to the recipe)
60 g nutella
2-3 tbsp alcohol (Cointreau/Irish Cream/brandy)
20 g caster sugar *
2-3 tbsp unsalted butter**
3-4 medium-sized eggs

Mix all the ingredients along with lighlty beaten eggs and pour the batter into a 20cm x 20cm baking tin. Preheat the oven to 180 degrees Celsius and bake for under half an hour or until the top of the cake becomes springy once touched with your fingers. Serve it with chocolate ganache, whipped cream and fresh fruit.

* used only if needed,  the mix of cake and cookies crumbles for this, which I was using, was sweet enough but best is to try while mixing all the ingredients
** I did not use it as there was enough butter in the cookies I used
